Lunch today was a stuffed pepper. I really wanted a yellow pepper, but green was was it was. I have never made stuffed peppers before and I was quite pleased with the results. I used a sage seasoned pork sausage with grilled onions and Parmesan cheese.
This particular recipe did not have rice (as I have not integrated that back into my diet yet) so I missed some of the texture I have come to expect. Next time I’m going to add some celery to see if I can get that slight toothy feel the rice gives.
